Red Noilly Prat is made in the same way, but with the addition of 30 flavourings, which produce the rich red colour. Joseph Noilly, a herbalist, developed the first formula in 1813, 50 years before the now archetypal vermouth, Martini. At its home in the South of France, a selection of fine white wines are aged outdoors in oak casks exposed to the Mediterranean sun, sea and wind for 12 months.

Colourless) Extra Dry Noilly Prat is a less complex wine formulated for the American extra-dry martini cocktail. Brought back inside and left to rest for a few months, the wines are then blended together into oak casks. In the oak casks, a process of maceration, supposedly unique to Noilly Prat, takes place over a period of three weeks. Located in the lovely port of Marseillan, in the South of France, Maison Noilly Prat is surrounded by local vineyards, overlooking the Mediterranean. Noilly Prat vermouth is handcrafted in the Languedoc region of the south of France using only Blancs de Blancs wines made from the local Picoult and Clairette grapes. On the nose there is slightly oaked mistelles with herbal aromas, balanced with floral notes and hints of chamomile. Noilly Prat Original Dry Vermouth is best served chilled or with ice, and garnished with a twist of lemon peel.

The aged wines are blended with sweet mistelle wine from the muscat grape, and a raspberry and lemon-infused distillate. However, in 2009, the extra-dry Noilly recipe exported to the USA was replaced by the original dry formula used worldwide.

In 1855, his son Louis Noilly and son-in-law Claudius Prat set up the company that became Noilly Prat, moving the business to Marseillan where it remains to this day. It's the brand of vermouth I've been using for a few good years now, so the extra bottle bottle was very welcome. The _ga cookie, installed by Google Analytics, calculates visitor, session and campaign data and also keeps track of site usage for the site's analytics report. It was to mimic this natural process that Joseph Noilly, in 1813, designed a process that made France's first vermouth. The Noilly Prat company is based in Marseillan, in the Hérault department of southern France (it lies some 50 km west of Montpellier) and exclusively use white grape varieties grown in the Marseillan area.
